Preparation In a mortar, chop the cloves of garlic, the parsley, a pinch of salt and a jet of oil. Crush everything. If you want, you can add a pinch of ground pepper if you are looking for a different touch. Whenever the dressing is ready, dice the pork secreto in relatively small chunks and prepare the grilled skewers. The chunks should be as uniform as possible. Season to your liking and leave them aside for preparing the garnish. In a pan, prepare the vegetables by sautéing the courgette and boiling the pumpkin (for about 20 minutes). Once the vegetables are in the pan, place the pork secreto skewers on the grill and let them become well done on both sides. Presentation You can produce a vegetable base on the plate with the skewers on top of them and finishing with some tender buds.
