Preparation Start by preparing the seasoning for the topside. Slice the garlics very thinly and add them to the oil and the white pepper in a mortar. Once the mix is ready, spread it on the whole piece and let it stand for a few minutes. Put some of the seasoning aside. Preheat the oven to 180º and put the topside inside. If you use a clay casserole, the result will be perfect. Add the rest of the seasoning on the base of the casserole. Once the topside is inside the oven, raise the temperature to 200º and let it bake for about 2 hours. Have a look every thirty minutes to check if it is necessary to spread more sauce on it. While the topside is in the oven, boil the carrots and grill the wild asparagus and the previously sliced pepper and courgette. Once the topside is ready, remove it from the oven and slice it to your liking. Presentation For a perfect presentation, place the topside slices first on a plate. For the garnish, wrap the courgette slices with the previously chopped carrot, pepper and wild asparagus. The result: just delicious!
