Preparation
- In a bowl, mix the yoghurt with the thoroughly chopped garlic, the grated lime, salt and pepper and soak the free-range chicken breast fillets in the seasoned yoghurt mix. Chicken with yoghurt is a delicious match.
- In a bowl, mix the breadcrumbs with –fresh or dry– thyme, La Vera paprika and the onion powder while you preheat the oven at 220º.
- o Remove the free-range chicken from the marinade and, after being well soaked in yoghurt, drench it deeply in the seasoned breadcrumb mix.
- Once the battered chicken breasts are ready, put baking paper in the oven, spray a dash of virgin olive oil and place the chicken breast fillets on top by spraying some more oil on them.
- o Put the tray inside the preheated oven and, after 8 minutes, turn the fillets over and let them roast for another 6 minutes on the other side. And your oven-baked battered breasts with yoghurt will be ready
Presentation
You can place the battered chicken fillets on a coloured lettuce bed.
