Preparation <ul> <li>Put the pan over a high heat to fry the potatoes. Once you put them in the fire, slightly lower the temperature.</li> <li>While frying the potatoes, take 4 free-range eggs and separate the yolk from the white.</li> <li>In a different pan, set the egg white with some of the Selecta ham fat.</li> <li>Once set, add the potatoes on the egg white and the ham strips and heat up.</li> <li>Turn off the burner, add the yolks on the residual heat and cook them slowly for a couple of minutes.</li> </ul> Presentation The eggs can be transferred to 3 or 4 cassoles.
