Preparation With a sharp knife, dice the turkey and chop the carrot, the pepper and the leek. Put a paella dish on the fire with olive oil. Firstly, brown the carrot, the pepper and the leek and some minutes after, the turkey. Whenever you see some colour in it, add the rice and fry everything gently. Add the water or soup (1 glass and a half of water for every glass of rice), the tomato sauce, the salt, a pinch of colourant, the chopped clean beans and artichokes. Once boiling, simmer for about 15-20 minutes. Presentation Serve the paella in a deep dish with some lemon slices.
